Spiced Pear Cocktail
You will love this cocktail for the holiday season. As discussed in Episode 3, here is how to start this two part cocktail. Plan on drinking this about 1 week to 10 days after you start the pear mixture. Start with a large canning jar. Then fill with:
750 ml scotch ( I used Johnny Walker Black)
3 very ripe pears (if using unripe pears, simmer in a very small amount of water to soften, cool before adding to the scotch)
3 cinnamon sticks
5 whole star anise
Rind of one orange
1/4 vanilla bean
1/4 teaspoon nutmeg
Cover jar and shake contents. Place in refrigerator for 1 week to 10 days shaking every few days to break down the spices and pears.
Tune in to Episode 4 (releasing week of 11/13) for part 2 of this cocktail when we bring it all together for a delicious drink.
Pour into seive and press solids through seive to capture all of the scotch and pear pulp into jar or bowl (I find it easier to catch it in a bowl, then I transfer it to the same jar it was steeping in.)
Part 2 - Make a Ginger Simple Syrup - don't worry, it's simple! Put one cup of water and one cup of sugar in saucepan and simmer until melted (about 3-5 minutes). Add sliced ginger and let sit for a few hours (2-3 hours). Store in glass jar.
To assemble:
Take a Cocktail Shaker and fill with ice. Add 2 oz of Pear Scotch mixture, 1 oz of the ginger simple syrup, 1 tablespoon of lemon juice. Shake vigorously, pour into highball glass. Top with a stirrer, a splash of club soda and a slice of pear!
Enjoy!
